In steam distillation, the steam from the boiling water removes the oil from the flowers.The mixture of steam and oil is then transferred into a condenser where it is cooled and then processed back into a liquid. The steam ultimately acts as a hydrosol (which is great for your skin by the way), and the lavender oil is eventually extracted.
